Cardamom is a member of the ginger family, native to India and is grown in most tropical countries. It is one of the most expensive spices, following saffron and vanilla.
Cardamom seeds grow inside a long 3 sided pod containing small black seeds. The seed pods can be added to cooking whole, or broken open to cook the seeds separately or the seeds can be removed and ground.
The seed pods do not soften during cooking and apart from the inedible husk, the pod can release quite a pungent flavour if you bite into one and so most people prefer to remove them before serving.
Cardamom is widely used as an ingredient for both sweet and savoury dishes in Indian, Middle Eastern, Arabic, and Swedish cuisine and frequently included as a spice in Garam Masala.
Use cardamom in savoury dishes, curries, rice, puddings, cakes and it can even be used as a herbal tea.

Storage: It is best to store herbs in airtight glass jars away from sources of heat and light in order to keep them fresh and retain full flavour. Repurposing pesto jars or small jam jars are ideal for storing 25g of dried herb.
