Organic Pine Nut Kernels
Pine Nut Kernels are not actually 'nuts' but rather the edible seeds of various pine tree varieties from the family Pinaceae, genus Pinus.
Pine nuts are considered to be a luxury seed and are expensive due to the laborious methods for harvesting and processing them. Pine nuts are only produced in female pine cones which take 2 or 3 years to mature after pollination. Traditionally the cones are harvested by hand and left to dry in the sun. The cones are then pounded to help release their seeds and picked out from the cones by hand. The final task is to remove the soft kernel from its hard shell without damaging them.
Shelled pine nuts are ivory-coloured long ovoid seeds which are firm with a smooth buttery texture and delicate yet delicious flavour.
Pine Nuts are highly nutritious and an excellent source of antioxidants, B vitamins, Vitamin E and minerals such as manganese, potassium, calcium, iron, magnesium, zinc and selenium.
Cooking: Pine nuts are commonly used for making pestos, adding to pasta sauce, couscous and salads or used for stuffing vegetables. Pine nuts can be dry fried briefly to release their flavour.
Storage: Shelled Pine nuts do not keep well at room temperature and so it is best to store them in an airtight jar in the refrigerator. You can also freeze them if you want to store them for longer periods.
